Catahoula Cur
Catahoula Curs are among the rarest dogs in Red Dead Redemption 2, as they only appear in big towns like Saint Denis and Blackwater. Due to their omnivorous diet, they will be attracted by both Predator and Herbivore Bait.
Cedar Waxwing
The Cedar Waxwing is among some of the rarest birds to find in the game, as it can only appear in three hunting zones: near the northwestern shore of Flat Iron Lake, in the Braithwaite Manor grounds and in an area found right to the south of the “E” and “W” in New Austin on the map. This bird is a herbivore, so Herbivore or Potent Herbivore bait is needed to flush it out. Being a small animal, only the bow armed with small game arrows can get a perfect kill on a Cedar Waxwing. The carcass can be sold for money, its feathers can be used to craft a variety of hats and the gamey bird meat can be used in cooking.
Chesapeake Bay Retriever
The Chesapeake Bay Retriever is yet another dog type that can only be found in ranches, towns and other human settlements in New Hanover. They tend to appear more often at Flatneck Station. In case none are present, use either type of bait to make one appear.
Chinese Ring-necked Pheasant
Chinese Ring-necked Pheasants appear in the same areas the Ring-necked Pheasants do, so head over to the southwest of Valentine and use either Herbivore or Predator bait to make one appear. Chinese Ring-necked Pheasants are very small birds, so the only weapon that must be used to get a perfect kill is the bow armed with small game arrows. They yield pheasant feathers that can be used to craft hat accessories as well as game meat that can be cooked or eaten on the fly.
Coastal Horned Owl
Coastal Horned Owls are quite common and can be found in pretty much all regions at night near water. They are carnivorous, so only Predator and Potent Predator bait can flush them out. Like the other owl types, Coastal Horned Owls are small birds, so only the Varmint Rifle armed with 0.22 shots can score a perfect kill. Owl feathers can be used to craft homing tomahawks, while gamey bird meat can be used in cooking. 
Collared Peccary
The Collared Peccary is among the animals that can only be studied and skinned after completing the main story, as it can only be found in New Austin. The best hunting areas are located to the south of the “New” in New Austin on the map. Being herbivores, use a Herbivore bait to flush one out. Like for other wild pigs, the bow armed with regular arrows is more than enough to get a perfect kill. A repeater is also ok. The perfect collared peccary pig pelt can be used to craft a special pair of boots, while tender pork can be used in cooking.
Common Loon
The Common Loon is not as common as the name implies, as it can only be found near bodies of water in West Elizabeth, New Hanover and Ambarino. An extremely good hunting spot is the whole island located in th eastern part of Flat Iron Lake. Loons are carnivores, so use a Predator bait to make one appear. Being a very small animal, the Common Loon can only be killed perfectly with a bow armed with small game arrows. It yields feathers and gamey bird meat once killed, which are used in crafting and cooking. 
Cottonmouth Snake
Cottonmouth Snakes can be found near the shores located in Roanoke Ridge as well as in the swamps in Lemoyne, such as the ones right outside Saint Denis. A good hunting spot is located near the train track in the southern part of Lemoyne connecting Saint Denis with Rhodes, near a body of water. Like the Midland Water Snake, the Cottonmouth Snake can be found swimming in water. A Predator or Potent Predator bait will make it appear. As snakes are not particulalry resilient, the bow armed with small game arrows is the only weapon capable of getting a perfect kill. The perfect snake skin can be used to craft a saddle, while stringy meat can be used in cooking or eaten as is to recover cores.
Cougar
Like American Condors, Cougars are among the final animals you will be able to study and skin, as they can only be found in the southern part of the map that can only be accessed after completing Chapter 6. Cougars can be found to the south of Blackwater as well as to the northwest of the “A” in new Austin on the map and to the south of Tumbleweed. These animals are carnivores, so only Predator Baits will make them appear. As they are big and strong, getting a perfect kill on cougars is possible only with rifles and with the bow armed with poison arrows. If you kill any with poison, however, you won’t be able to get meat after skinning them. Cougar pelt, fangs and big game meat are used in crafting and cooking.
Cuban Land Crab
The Cuban Land Crab is a rather uncommon animal in Red Dead Redemption 2, as it can only be found in three different hunting spots: on the island on the eastern side of Flat Iron Lake and in two areas to the very south of the gap between New and Austin on the map and to the south of the “S” in Austin. If you’re still in Chapter 5, you can also find it in Guarma. Being omnivores, Cuban Land Crabs can be attracted with either a Predator or Herbivore bait. While small, their carapace is hard so a bow armed with regular arrows is needed to get a perfect kill on Cuban Land Crabs. They don’t yield anything other than their carcass, which can be sold to any trader in the game for a small amount of money.
Desert Bighorn Ram
The Desert Bighorn Ram is native to the New Austin region and can be easily found in an area located to the southwest of Tumbleweed, very close to the “N” in New Austin on the map. Rams are herbivorous, so only a Herbivore bait will make one appear. Rams can be killed perfectly with the bow armed with regular arrows or any repeater. Poison arrows are also a good choice, but you won’t be able to collect meat if you kill one this way. The pelt, horns are gristly mutton can be used in crafting and cooking.
Desert Bighorn Sheep
The Desert Bighorn Sheep is also native to the New Austin region, and it can be found easily all over the region. It’s a herbivore, so only Herbivore and Potent Herbivore bait can flush one out. Like for any other sheep in the game, the bow armed with regular arrows and any repeater can score a perfect kill. The hide and gristly mutton can be used in crafting and cooking.
Desert Iguana
The Desert Iguana is an extremely common animal in the deserts found in the New Austin region, which can only be explored during the Epilogue, but it can also be found in the northern part of the island located in the eastern side of Flat Iron Lake. Iguanas are carnivores, so only a Herbivore bait can make one appear. Iguanas are very small animals, so use the Varmint Rifle armed with 0.22 shots to score a perfect kill on one. The perfect iguana skin can be crafted into a hat at any trapper, while herptile meat can be used in cooking.
Devon Bull
The Devon Bull is a very common animal that is usually found in ranches. As you really cannot kill and skin one in a ranch, as you will become wanted, you may want to find a wild one to avoid this. They are found in the same areas where the Angus Bull spawns. Devon Bulls are herbivores, so the Herbivore Bait is the right bait to use to lure them out. Like Angus Bulls, Devon Bulls are very strong and resilient, so only a powerful weapon like a scoped rifle can get a perfect kill on them. The bow armed with improved arrows or poison arrows is also a good choice, but you will have to get closer to the animal, which will retaliate once attacked. Bull pelt, horn and prime beef can be used in crafting and cooking.
Devon Ox
The Devon Ox, like the Angus Ox, can be found in farms and ranches in West Elizabeth, New Hanover and Lemoyne. They appear often right to the west of the “W” in West Elizabeth on the map. As herbivores, only Herbivore baits will make them appear. Oxen are strong animals, so use the bow with improved arrows or any scoped rifle to get a perfect kill on them. Perfect ox hide is used to craft a pair of chaps, while the horns can be used in regular crafting. They also yield prime beef joint, which can be eaten on the spot or used in cooking.
Diamondback Rattlesnake
Diamondback Rattlesnakes can be found in Lemoyne, New Hanover, and West Elizabeth. A good hunting spot is found to the east of the “R” in Hanover on the map. Being carnivores, they can be flushed out with a Predator Bait. Being very small animals, the bow armed with the small game arrows is the only weapon capable of scoring a perfect kill on snakes. Perfect snake skin can be used to craft a saddle, while stringy meat can be used in cooking.
Dominique Chicken
The Dominique Chicken is a rather common animal that can be found mostly in the Heartlands area of the New Hanover region, near Blackwater, in an area found between the “Y” and “N” in Lemoyne, to the west of the Van Horn Trading Post and right on the “R” in Ambarino on the map. These chickens are omnivores, so either type of bait can be used to make them appear. Being small animals, you can get a perfect kill on Dominique Chickens only by using the bow armed with small game arrows. Feathers and plump bird meat can be used for crafting and cooking.
Dominique Rooster
The Dominique Rooster is a little more uncommon than the Dominique Chicken, but it’s not all that hard to find. The best hunting areas are located near the northern shore of Flat Iron Lake, to the west of the Van Horn Trading post, to the east of Lagras and in the southwestern part of Braithwaithe Manor. These birds are omnivores, so both the Predator and Herbivore baits are good to flush them out. Like for other birds, the bow armed with the small game arrows is the only weapon capable of getting a perfect kill. Feathers and plump bird meat are used in crafting and cooking.
Double-crested Cormorant
The Double-crested Cormorant is not particularly difficult to find. The best hunting area is the whole riverbank to the south of Rhodes and Braithwaite Manor. They also appear near other bodies of water like Lagras. Double-crested Cormorants eat fish, so you must use Predator Baits to make them appear. As they are rather small birds, you can get a perfect kill on Double-crested Cormorants by using the bow armed with small game arrows. Feathers and gamey meat can be used in crafting and cooking. 
Eastern Turkey Vulture
The Eastern Turkey Vulture can be found in several areas all over West Elizabeth, New Hanover, Lemoyne and New Austin. Some very good hunting spots are located right on the first “T” in West Elizabeth on the mao, on the “A” and “N” in Hanover and right to the south of Armadillo in New Austin. They are carnivores, so use a Predator bait to make one appear. The Varmint Rifle armed with 0.22 shots is the only weapon capable of getting a perfect kill on vultures. They yield vulture feathers, which can be used to craft hat accessories as well as other items, and gamey bird meat, which is used in cooking.
Eastern Wild Turkey
The Eastern Wild Turkey is a rather common animal, as it can appear in several areas in West Elizabeth, New Hanover and Lemoyne. A very good hunting spot that’s available right from the start of Chapter 2 is the areas to the north and south of Valentine, as well as around Rhodes. They only appear in forested areas and those with light vegetation, so don’t search for them on plains. As omnivores, you can use either type of bait to make one appear. The Varmint Rifle armed with 0.22 shots is the only weapon capable of getting a perfect kill on turkeys. They yield feathers, which can be used to craft a variety of items, as well as plump bird meat, which is used in cooking.
Eurasian Tree Sparrow
The Eurasian Tree Sparrow is a very commong bird that can be found in the grasslands of West Elizabeth and New Hanover. It also appears near Braithwaite Manor to the south of Rhodes. These birds are omnivorous, so you can use any type of bait to make one appear. Eurasian Tree Sparrows are small birds, so use the bow armed with small game arrows to score a perfect kill on them. They yield sparrow feathers, which can be used to craft hat accessories, as well as gamey bird meat, which can be used in cooking. 
Fer-de-Lance Snake
The Fer-de-Lance Snake is a missable animal, as it only appears in Guarma. Being missable, studying and skinning it is not needed to get the Zoologist and Skin Deep trophies. Like all other Guarma snakes, it appears in the area on the “E” in Arroyo De La Vibora on the map. Use a Predator bait to make it appear. The bow armed with small game arrows is the only weapon capable of scoring a perfect kill on Fer-de-Lance Snakes. They yield their skin and stringy meat, which are used to craft items and cook meals.
Ferruginous Hawk
Ferruginous Hawks are quite common, and they can be found in the eastern part of New Hanover, the northeastern shore of Flat Iron Lake, right on the “Y” in Lemoyne and all over New Austin, which can only be explored after completing Chapter 6. Hawks are carnivorous, so only a Predator Bait can make one appear. They are not that big in size, nor resilient, so a Varmint Rifle armed with 0.22 shots is the only weapon capable of scoring a perfect kill on Ferruginous Hawks. They drop feathers and gamey bird meat after being killed, which are used in crafting and cooking.
Florida Cracker Cow
The Florida Cracker Cow can be found in ranches across all regions of the world. They are herbivores, so using the Herbivore Bait will make them appear. Being a large animal, you can get a perfect kill on it by using the bow armed with improved arrows or any scoped rifle. Once killed, the Florida Cracker Cow yields cow hide and prime beef, which are used in crafting and cooking.
Florida Panther
The Florida Panther is just as rare as the regular panther, and only appears in remote forested wetlands in Lemoyne. Head to the south of Bolder Glade, use a Predator or Potent Predator bait and hope for the best. Like regular panthers, Florida Panthers are extremely aggressive and will attack you on sight, so use a scoped rifle armed with high velocity or express ammo to get a perfect kill while staying as far from them as possible. Perfect panther pelt can be used to craft a saddle at any trapper, while claws and heart can be used in regular crafting. Big game meat is used in cooking.
Golden Crowned Sparrow
The Golden Crowned Sparrow appears in areas with little vegetation in New Hanover and West Elizabeth. They are quite common in the areas surrounding the town of Strawberry as well as to the north of Valentine and to the north of the “H” and “A” in Hanover on the map. Use a Predator or Herbivore bait to make one appear. Like for all small birds, the bow armed with small game arrows is the only weapon capable of scoring a perfect kill. They yield feathers, used in crafting, and gamey bird meat, used in cooking.
Golden Eagle
Golden Eagles appear in the same hunting areas as the Bald Eagle, like the area between the “R” and “I” in Ambarino and in an area between the “V” and “E” in New Hanover in the map. They are also carnivorous, so only Predator baits can make them appear. Being a bit more resilient than mother birds, the only way to get a perfect kill on Golden Eagles is with the Varmint Rifle armed with 0.22 shots. They yield eagle feathers and gamey bird meat when killed, which are used in crafting and cooking.
Gray Wolf
The Gray Wolf is a rather uncommon animal, as is can only be found in select areas in Ambarino and West Elizabeth. The best hunting spot is located to the north of the “O” in Ambarino. As they are carnivores, only Predator baits will make them appear. Despite their size and strength, the bow armed with regular arrows is more than enough to score a perfect kill. Perfect wolf pelt can be used to craft a vest, while the heart and big game meat can be used to craft items and cook. 
Great Blue Heron
The Great Blue Heron prefers wetlands, so it can only be found in the Lemoyne region in areas like the swamps to the east of Saint Denis and in the areas surrounding Lagras lake and in the Bayou Nwa. Herons are carnivores, so use a Predator bait to make one appear. Great Blue Herons aren’t big animals at all, so you can score a perfect kill on them only with the Varmint Rifle armed with 0.22 shots. They drop feathers and gamey bird meat, which is used on crafting and cooking. 
Great Green Macaw
The Great Green Macaw is another bird that only appears in Guarma. It spawns all over the island, and a Herbivore bait will make one appear. Being very small birds, the Great Green Macaws must be killed using the bow with small game arrows to score a perfect kill. They yield parrot feathers and exotic bird meat when killed, which are used in crafting and cooking, respectively.
Great Horned Owl
The Great Horned Owl appears in the same areas where the Californian Horned Owl appears. Since they are carnivores, only the Predator and Potent Predator baits will make them appear. Like every other small animal in the game, the only way to score a perfect kill on Great Horned Owls is by using the Varmint Rifle armed with 0.22 shots. Owls yield their feathers once killed, which can be used for crafting, as well as gamey bird meat, which is used in cooking.
Greater Prairie Chicken
The Greater Prairie Chicken is a very unique type of chicken that can only be found in the Great Plains, which are located to the west of Blackwater. These chickens are omnivorous, so you can use either Herbivore or Predator Bait to make them appear. Like other birds, the Greater Prairie Chicken can only be killed perfectly with the bow armed with small game arrows. And just like other chickens, they drop feathers and plump bird meat when killed, which can be used in crafting and cooking respectively.
Green Iguana
The Green Iguana is among the animals that can be found in Guarma, but they also appear in the northern part of the island located in the eastern part of Flat Iron Lake. The Green Iguana is a herbivore, so use a Herbivore bait to make one appear. Like for the regular Desert Iguana, use a Varmint Rifle armed with 0.22 shots to score a perfect kill. The perfect iguana skin can be used to craft a special gat, while herptile meat can be used in cooking.
Grizzly Bear
Grizzly Bears are slightly less common than American Black Bears, as they can only be found in the Grizzlies East. A very good hunting post is found in the area directly to the northwest of Wallace Station. They are omnivores, so either type of bait is ok to flush them out. Grizzly Bears are even stronger than other bear types, so you must use a scoped rifle armed with High Velocity or Express Bullets to get a perfect kill. The perfect bear pelt can be used to a special hat at trappers, while claws, fat, and big game meat can be used in crafting and cooking. 
Hereford Bull
The Hereford Bull is just as rare as the other bulls in Red Dead Redemption 2, and can only be found in three specific hunting areas, the same ones where the Angus and Devon Bull can be found: to the north of the first “E” in West Elizabeth, to the north of the “H” in New Hanover and to the east of Lagras and north of Saint Denis. This bull is a herbivore, so the Herbivore Bait is the only bait that can be used to flush it out. Like the other bulls in the game, the Hereford Bull is a large and resilient animal, so the only way to get a perfect kill on it is with rifles or with the bow armed with improved arrows, if you’re willing to get a bit closer to the animal and risk its counterattack if not killed in a single shot. Bull pelt, horn and prime beef are used in crafting and cooking.
