I know what you mean about Colter. I would have liked to stay there a bit longer, and actually be able to range out and explore without the weather forcing me back.
Horseshoe Overlook is my favourite. It's a cosy, happy, welcoming place. I always felt at home there, and I usually try to stretch chapter 2 out for as long as I can. The only down side - despite the game massively opening up there - is having so many things still locked until you move on, otherwise I'd stay longer.
I do like Clemens Point, and it's definitely my second favourite, but the layout just feels a bit more awkward - I can never quite get comfortable with it - and the repeated "no guns in Rhodes" messages and restrictions during chapter 3 kind of sour me on the place a bit.
I really didn't like Shady Belle. The swamp is interesting but nasty. Gang members don't seem to like the place either. The only times I can remember any of them saying anything good about it was when they were being sarcastic.
Beaver Hollow is indeed a hell hole. So dreary and depressing. Throughout the game I do a massive amount of hunting and contributing food, money and valuables to the camps, but I can rarely motivate myself to do anything around that place. I mostly ended up avoiding it.
I suppose technically Guarma and Lakay count as camps. While the former only has Micah's epic gut going for it, the latter does at least let you cut loose with a gatling gun in that one mission.
Generally, with the exception of moving from Colter to Horseshoe, I see the camps as getting progressively worse, reflecting the state of the gang and their prospects.
