Updates can't be uninstalled. Perhaps you could go through and delete apps you no longer use or other content.

What update did you install? Was it an iOS update or an APP update?
If it was an APP update, and you've previously synced your iPhone to iTunes on your PC, AND you didn't sync your new app update ... then check iTunes to see if it has the older version of the app. Check the "Apps" tab and scroll down the list of apps to see if it's there ... then rightclick it and "Get Info" of that app. Check the version number. It should be a version less than the new app you have installed on your iPhone.
If you've updated the app through iTunes on your PC, then the OLD version will have moved to the trash. Check the trash for the old version. Delete the "new" version in iTunes and add the old version back into iTunes. Delete your "new" app on the iPhone. Then copy/sync the "old" version back into your iPhone.
If you're managing your apps only through iCloud and never synced to a computer, then, you can't do any of this.
This is more of an undo than an uninstall, but it works.

Thanks a lot. This helped me to get an older version of Bejeweled Blitz back on my ipad and iphone. Popcap has really messed up on the latest 1.2 upgrade-it doesn't always allow you to connect through Facebook. I can now play the 1.7.7 version on my ipad and connect through Facebook. Haven't been able to get it to work as yet on my iphone but, hopefully, it will eventually.
